    Starting with this year’s Jang (Korean soy-ferme Starting with this year’s Jang (Korean soy-fermented sauces — soy sauce & doenjang) 🤎

The beauty of Korean fermentation lies in “wild fermentation”, meaning no lab grown starter is used.
This yields rich, deep & funky flavors. 

The first step of making Jang always starts with making 메주 meju, fermented soybean block, which only needs good quality soybeans and water.

Jang-making encompasses the knowledge, beliefs, and practices involved in the making, keeping, and consuming of the traditional Korean sauces which are the fundamental condiments in Korean cuisine.

The inscription of Jang-making will serve as a platform for the public to recognize and appreciate the value of our intangible cultural heritage in our daily lives.

So kimchi isn’t just red, but it comes in a rainbow of colors and endless varieties, each with its own flavor and story🌈

During this biggest Korean cultural festival in the world, we showcased Korean cuisine, with focus on Kimchi🥬❤️

The first session was all about making kimchi with fresh & seasonal Hungarian produce, with Hungarian paprika as the star of the dish✨
The artisanal Hungarian paprika manufacturer Fajszi Paprika @fajszipaprika was invited to tell us more about their fabulous work and produce

The second session was about cooking with kimchi with Hungarian specialities🇭🇺 We teamed up with @jongga_eu and made two classic dishes incorporating Jongga Kimchi and Mangalica produce(THE BEST🤎)

모꼬지 대한민국 2024✨에서 선보인 한식

국제한류문화축제 모꼬지 대한민국에서 한식을 선보였습니다. 이번엔 김치가 주인공이였죠❤️

첫 세션에는 제철 헝가리 농산물을 활용한 김치를 선보였는데요. 특히 고춧가루 대신 헝가리산 파프리카를 사용한게 차별점이었고, 헝가리에서 가장 좋은 품질의 파프리카를 생산하는 생산자분도 함께 자리해주셨습니다🌶️

두 번째 세션에서는 헝가리 진출 기업인 대상 종가집 김치와 협업하였는데요. 종가집 김치와 헝가리 특산물인 만갈리차 토종 돼지를 활용한 두 가지 한식을 선보였습니다🤎 

이번 “서울-부다페스트” 책을 공저한 헝가리 와인전문가 아그네스 치바-헤르체그와 함께 하였습니다📚

책에 소개된 한식과 헝가리 와인 페어링 몇 가지를 직접 체험해보는 시간을 가졌는데요. 두 나라 식문화의 조화를 많은 분들이 공감해주시고 즐기는 모습에 더더욱 뿌듯해졌습니다💛

또, 88올림픽때 방한하여 한식을 처음 접한 후 이번에 새로이 재발견했다며 깊은 감명을 받으셨다는 베테랑 기자님의 말씀이 기억에 남습니다
